Ginger, Apple & Roasted Butternut Squash Soup

This winter staple will warm you up on any winter day. We roast local butternut squash and apples and work in fresh ginger and turmeric. We add a little coconut milk for richness. Finished with some fresh thyme and blended luxuriously smooth. Fresh baguette for dipping on the side. Serves 2
