Vegetarian Eggplant Napoleon

This vegetarian napoleon will satisfy meat lovers its so good. Local eggplant and zucchini layered between tomato, fresh mozzarella and ricotta. Sits on a bed of quinoa with blistered tomato, baby arugula and basil spinach pesto. Finished with reduced balsamic glaze and fresh basil. Serves 1
